Fig Newtons: @Regrann from @edgarraw - Blueberry Fig Newtons, (recipe below) one of my favorite treats growing up are fig newtons and remaking them last night just brought back memories. These are gluten free and refine sugar free, but I also want to make them oil free and nut free, so I will remake them tonight before I go to bed with coconut flour and a bit more aquafaba and hope they come out the way I want to. Anyway, getting ready for my first class today, so catch ya later. 😊💪 Stay well my friends. Crust 1 cup of almond meal (store bought) 3-4 of a cup of oat flour 2 tbsp of coconut sugar 1 tsp of cinnamon 1 tsp of vanilla powder ½ a tsp of lime zest 1 tsp of baking powder ½ a tsp of pink salt 1-3 of a cup of coconut oil (melted) 3 tbsp of aquafaba Filling 1 cup of soaked dried figs ½ a tsp of cinnamon 1-3 of a cup of blueberries 1 tsp of lime juice Instructions Take all curst ingredients and mix thoroughly. Take all filling ingredients and blend until smooth. Line a baking tin or tray with parchment paper and lay half of the crust, add filling and lay the other half of the crust on top.
